Commercial food equipment is expected to withstand a lot. While they are designed for constant use, regular cleaning, moisture, food acids, and strict hygiene requirements can all be damaging to the equipment. However, the material used to manufacture this equipment will have a significant role in how well it performs long-term.

You have probably noticed that the majority of commercial kitchen equipment is constructed from stainless steel. It has become the industry standard because it combines strength, corrosion resistance, and is very easy to clean.

However, not all stainless steel is the same. There are different grades which offer completely different levels of strength and protection, making some better suited to certain applications than others. Painted Steel

Aluminium

Plastic

What Makes Stainless Steel Hygienic?

What Are Stainless Steel Grades?

304 Stainless Steel

304 steel can be affected by high salt concentrations and specific cleaning chemicals. However, this usually occurs if the material has not been properly cared for previously.

This material is usually used on work tables, prep surfaces, cabinets, and machinery such as slicers and mincers. It is widely available, affordable, and has a long lifespan, making it suitable for a variety of purposes in a commercial kitchen.

One reason 304 is so popular is how inexpensive it is for its performance. For the majority of commercial kitchens and food processors, it provides all the corrosion resistance required without the additional expense of specialist grades.

316 Stainless Steel

This steel also contains chromium and nickel, with the addition of molybdenum. This element greatly improves its corrosion resistance, making this material better suited for very harsh environments that would eventually wear down 304 steel.

316 steel is perfect for environments with high salt concentrations such as coastal businesses, seafood or high-salt food processors, or workspaces that require chemical wash-downs.

Although this steel features much higher durability, this comes with a cost. Luckily, the advantages of this steel are often unnecessary for standard kitchens and are only required in the industries outlined.

430 Stainless Steel

As 430 contains little or no nickel, it is less expensive than 304 stainless steel. However, this cost reduction comes at the expense of corrosion resistance. Therefore, 430 steel is usually used for decorative parts, appliance exteriors, and splashbacks. Due to the low corrosion resistance, it is usually not preferred for food-contact areas.

Duplex Stainless Steel

On the other hand, Duplex steel is extremely strong, corrosion-resistant, and expensive. It is only used in specialist industrial processing and is an unnecessary expense for standard commercial kitchens.

How to Care for Stainless Steel Equipment

To get the most out of your stainless steel equipment, you must follow a daily cleaning schedule that removes all debris. Wash with warm water and a suitable food-safe detergent.

Using steel wool, chlorine bleach, or other highly abrasive cleaners will damage the protective surface of the steel and should only be used if absolutely necessary. Instead, opt for a microfibre cloth, soft brush, or non-scratch pads, which will maintain your steel and thoroughly clean it.
